What Is Gor Keri Achar? Names, meaning and where it comes from
Gor keri achar is a Gujarati sweet mango pickle. Keri (કેરી) is raw mango, gor or gud (ગોળ) is jaggery, and achar is the Hindi word for pickle. In Gujarati kitchens the same dish goes by gor keri nu athanu or gol keri, and in shops and online you will see it spelled gud keri pickle, god keri or gur keri. All of these mean the same family of pickle.
It belongs to the wider tradition of keri achar, mango pickle, which runs through every region of India in a hundred forms. What makes the Gujarati version different is the sweet-sour balance. Instead of drowning the mango in chilli and mustard oil, a Gujarati family cooks it down with jaggery and rounds it off with fenugreek, aniseed and a little pepper, so that every spoonful hits sweet, tangy and spicy in turn.
Because it travels well and pairs with almost anything, gor keri has long been the pickle that goes into thepla boxes, train tiffins and festival hampers. For more on the family of pickles, see our guide to Gujarati homemade athanu.
Kachi Keri Mango Pickle: Why Raw Mango? The fruit decides the pickle
Kachi keri (કાચી કેરી) means unripe, raw mango. It is firm, green and sharply sour, and it is the only kind of mango that holds its shape in a pickle. A ripe mango would turn to pulp in oil and jaggery. Raw mango stays in distinct pieces and keeps a clean tartness that the sweetness can play against.
That tartness is also the reason a kachi keri mango pickle keeps so well. The natural acidity of the fruit, together with salt and oil, is what the traditional method relies on. This is why we do not need to add vinegar to our pickles. The sourness is already in the mango.
| Point | Kachi keri (raw mango) | Ripe mango |
|---|---|---|
| Texture in pickle | Firm pieces | Turns soft and mushy |
| Taste | Sour, balances jaggery | Already sweet |
| Use in achar | Traditional choice | Better for murabba, jam, pulp |

Gud Keri Pickle Ingredients, Explained What each ingredient does in the jar
Honest ingredients are the foundation of trust, so here is the full list from our product pages and what each item is there for.
| Ingredient | Role in the pickle |
|---|---|
| Mango (kachi keri) | The base. Firm, sour raw mango pieces. |
| Gunda | Indian cherry (gum berry). Adds a soft, slightly sticky texture and a distinctive tang. |
| Carrot | Adds sweetness, colour and crunch to the mix. |
| Jaggery (gor/gud) | The sweetener. Gives a deep, mellow sweetness that refined sugar does not. |
| Groundnut oil | The medium. Carries the spices and protects the pickle under a layer of oil. |
| Aniseed (saunf) | A cooling, slightly sweet aroma. |
| Black pepper | A warm, sharp background heat. |
| Turmeric powder | Natural colour and earthy flavour. |
| Red chilli powder | The gentle heat. |
| Fenugreek seeds (methi) | A savoury, slightly bitter edge that stops the pickle from tasting only sweet. |
| Mustard seeds | A sharp, nutty bite. |
| Asafoetida (hing) | A savoury depth, a classic in Gujarati cooking. |
| Salt | Seasoning and traditional preservation. |
There is no vinegar and no artificial colour on that list. Our product pages describe the jars as additives free, handmade and sun dried. Allergic to mustard, fenugreek or any other ingredient? Check the product page and ask us before ordering.
What Does Gor Keri Achar Taste Like? Taste and texture, honestly described
Set expectations first: this is not a fiery pickle. It leans sweet, with tang and a gentle heat behind it.
- First bite: jaggery sweetness and a bright, sour mango tang.
- Middle: fenugreek, aniseed and mustard add savoury depth.
- Finish: a mild warmth from chilli and black pepper.
- Texture: chunky and varied: firm mango, crunchy carrot, soft and sticky gunda, all coated in oil and masala.
If you like a thin, sharp, mustard-oil style mango pickle, this will feel rounder and sweeter. If you like chhunda, you will find it a little more textured. Want hotter? Our Mango Spicy Chhunda and Ginger-Garlic Spicy Pickle are better matches. Want sourer? Try Khatti Keri or Methi Keri.
How Gor Keri Achar Is Traditionally Made From raw mango to jar
Every household has its own touch, but the broad method of a traditional Kathiyawadi gor keri achar goes like this:
- Selecting the mango. Firm, raw, sour mangoes are chosen, washed and dried completely.
- Cutting and salting. The mango is cut into pieces and salted to draw out moisture.
- Sun drying. The pieces are dried in the sun so the pickle does not carry excess water. Our product pages describe our jars as sun dried.
- Preparing the masala. Spices such as turmeric, chilli, fenugreek, mustard, aniseed and asafoetida are readied.
- Adding jaggery. Jaggery is worked in with the mango, along with the other vegetables of the mix, such as carrot and gunda.
- Adding oil. Groundnut oil goes over the pickle so that it stays covered.
- Resting. The jar is left to mature so that the sweet, sour and spicy notes settle together.
We follow this traditional approach at our kitchen in Kailash Wadi, Junagadh. Where we are is part of the story: the Gir foothills around Junagadh are known for their mangoes, and raw-mango pickling is a long-standing family tradition in Saurashtra.

How to Store Gor Keri Achar So It Lasts Simple habits that protect the jar
Stored properly, our pickles keep for about 6 to 12 months.
- Use a dry, clean spoon every time. Water is the biggest threat to any pickle.
- Keep the jar in a cool, dry place, away from sunlight, the stove and the sink.
- Keep the pickle covered with a thin layer of oil. Press it down gently if the oil level drops.
- Close the lid tightly and wipe the rim after use.
- In humid weather or a hot kitchen, the fridge is a safe option. Let it reach room temperature before serving.
What is normal in a jaggery pickle?
The jaggery and mango release moisture and the masala settles, so the oil, syrup and colour can look a little different after some weeks. A deeper colour or a slightly thicker syrup is usually normal.
When to throw it away
If you see mould, notice a rotten or unusual smell or the pickle turns slimy, do not eat it. Message us on WhatsApp.
